Kufri Jyoti is a commonly cultivated potato variety that is suitable for cultivation in the northern parts of India. This variety occupies more than 60% of the potato cultivation area across India and has replaced numerous other varieties over time.
The reasons for its popularity is because of its wide adaptability; it is a high dry-matter potato that can be used for chipping and processing purposes. It degenerates slowly, is easy to cook and has a floury texture making the flavours mild.
Each of the tubers is usually white, large and oval, with smooth skin, fleet eyes, and white flesh. The crop matures early in the hills, and is best grown in Maharashtra, Bihar, Gujarat, Haryana, Uttar Pradesh, Punjab, Karnataka and West Bengal.
